I've just barely started paying attention again because for the last 6 months I haven't been in much of a football mood haha. So I don't have a whole lot of insight, but from what I've heard the general schemes and concepts will be the same. They're definitely not installing a brand new offense. I've read that one reason they chose Sarkisian is because the systems that he has run in the past are similar to what the Falcons have been running the last few years. I think their main guys should all put up good numbers again this year. Edited to add: I think the run game in particular will be basically what they've been running. The new wrinkles will mainly be in the passing game.
I think the offense will be fine under Sarkisian. I don't think they're changing too much. Probably a slight regression though, just due to the law of averages. The defense is young and rapidly improving. I think they're building something good on paper, but mentally who knows. I could see 12+ wins, I could also see 8-8. I don't know how you rebound from the most ridiculous collapse in sports history. That was bad, even by Atlanta standards. I'm born and raised in the ATL, so I say that from a place of pain.
